Ingredients
1 cup rajma (soaked overnight), 4 cups water, 1 teaspoon salt, 3-4 tablespoons oil/ghee, 1 teaspoon cumin seeds, 3-5 cloves, 1 crushed black cardamom, 1 bay leaf, 1-inch cinnamon stick, 2 finely chopped or pureed onions (if preferred), 2 teaspoons ginger-garlic paste (if preferred), 1 chopped green chili, ¼ teaspoon turmeric powder, 1 teaspoon Kashmiri red chili powder, 1 teaspoon coriander powder, ½ teaspoon cumin powder, ½ teaspoon amchur powder, 2 cups tomato puree, ½ teaspoon Satvic Foods' Rajwadi Garam Masala (further enhances the taste), salt to taste, 1 teaspoon Kasuri methi, 2 tablespoons chopped coriander leaves for garnishing
Steps to follow
- Wash the rajma and soak it in water overnight.
- Add the soaked rajma to a pressure cooker. Add salt and 4 cups of water. Mix well. Cover the lid and place the cooker on heat.
- Cook the rajma up to 6-7 whistles or until it turns completely soft. Don't drain the water. The same water will be used in the gravy.
- Heat oil in a pan, and add bay leaf, black cardamom, cinnamon, cumin seeds, and cloves. Saute for 40-45 seconds.
- Add onions (if preferred) and cook for 4-5 minutes.
- Add green chili and ginger-garlic (if preferred) paste. Saute for another 2-3 mins, and then add turmeric, red chili powder, cumin powder, amchur powder, and coriander powder. Cook the spices for a minute on low flame.
- Now add tomato puree and salt. Cook for 6-7 minutes or until the tomatoes and spices are cooked well. Remember that the boiled rajma also has salt, so add salt accordingly at this stage.
- Add the boiled rajma along with its water. You can increase or reduce the quantity of water. The rajma will thicken on cooking further and later when it cools down, so add water accordingly.
- Cover the lid and cook the rajma on low flame for 20-25 minutes.
- Open the lid and mix the gravy well. Add Satvic Foods' Rajwadi Garam Masala, crushed Kasuri methi, and coriander leaves. Stir well and serve the delicious rajma.
